Our Valentine's Day Meal, made with love!

For Valentine's Day, Todd and I decided to avoid the craziness of dining out and we made our own meal. And let me just say, it was delicious. I found a recipe online for stuffed tilapia at recipe.com. Todd and I love all different kinds of fish, but unfortunately we rarely make it, Valentine's Day was a the perfect opportunity.

The ingredients included:
4 pieces of fresh tilapia
  • 1 bag of frozen broccoli
  • 1 8oz container of cream cheese with chives and onions
  • 1/2 cup of parmesan cheese
  • 1/2 cup of seasoned stuffing (we bought a quick store bought stuffing mix)
  • 1/2 cup of milk
  • 2 tablespoons of white wine
 
Begin by taking the tilapia and washing it. Pat it dry with paper towels.


Next, combine drained broccoli, egg, cream cheese
and parmesan cheese in a bowl and mix it together.
 
 
Once mixed together add in the stuffing.
 
 
 
Spoon mix onto one end of the tilapia. Then carefully roll up the tilapia.
 
 
Once all of the tilapias are stuffed bake them at 350 degrees for 35 minutes.

Because we LOVED the stuffing we took the extras and put it on a stovetop and added the white wine and about a 1/2 cup of milk to make it more of a sauce. Then once the tilapia was done cooking we spread it on top.


 

Though it looks pretty sloppy, it was incredibly delicious. We served it with my favorite green bean casserole and Todd made his mom's recipe for crab cakes.
 
For dessert we ate some chocolate covered strawberries.
 Todd sent me these from Sharri's Berries to my work. He's the sweetest. :)
